About Us

One man, Ryan, fresh from a beer brewing course, had a simple thought: “I could do this.” What followed wasn’t just a hobby—it became a shared journey. He pulled in mates, one of his brothers, Mum and Dad, and together they set out to build something meaningful. That idea became Lone Gum Farmhouse Brewery.

Inspired by travels across the world—breweries tucked into countryside hills, rustic farms, wineries, and unforgettable dining experiences—we developed a deep appreciation for flavour, tradition, and experimentation. That journey led us to the complex world of Belgian-style aged sours. Drawing on global techniques and alternative fermentations, we craft barrel-aged, wild and spontaneous ales that reflect both place and patience.

Our vision was always grounded in sustainability—using local produce where possible and working in harmony with the land. We put in the work, completed feasibility studies, and presented our dream to council for approvals.

And they said “NO”.

But that wasn’t the end—it was a turning point.

We found a new home at Unit 3, 77 O’Sullivan Beach Road in Lonsdale. There, we rolled up our sleeves and built something from the ground up—a brewery, a bar, and a venue that would become the heart of what we do. This space became Unit Three Collective—a place where creativity, community, and craft all come together.

More than just a brewery or distillery, Unit Three is a space built to bring people together. A relaxed, welcoming venue where good beer, good spirits and good company all meet under one roof. Whether it’s Friday knockoffs, long afternoons with friends, birthdays, live events or celebrations, we wanted to create a place that felt approachable, family-friendly and genuinely enjoyable to spend time in.

With 20 rotating taps pouring our own creations alongside a curated selection of local guest beers, there’s always something new to discover. From easy-drinking lagers and hop-forward IPAs to barrel-aged farmhouse ales and carefully crafted spirits, Unit Three is designed for both the curious drinker and the seasoned craft enthusiast alike.

Brewing, especially barrel-aged beer, teaches you patience. And in those quiet moments of waiting, curiosity took over.

That curiosity became Night Works Distillery.

Born from long nights and a relentless pursuit of quality, Night Works is where we embraced the calm and focus of working after dark. Starting with vodka and our house gin, we’ve grown a range of carefully crafted spirits that reflect the same passion and attention to detail as our beers.

As we evolved, so did our offering.

So, Day to Be Brewing came to life – small-batch, once off craft beers, fermented with love and care, made to be enjoyed whenever the mood strikes.

Together, everything pours under the Unit Three banner – our tap house, our venue, and the home of all.

Today, everything we do is still driven by that original spark under the lone gum tree: curiosity, collaboration, creativity, and a desire to make things properly – to satisfy even the most discerning palates.

Lone gum

Wild by nature. Patient by design.
This is where it all began. Born under a gum tree in Pages Flat, Lone Gum is our passion project for barrel-aged, wild and spontaneous ales. Inspired by Belgian traditions and global fermentation styles, this is where we lean into time, terroir, and a bit of funk.

Night works distillery

Crafted after dark.
When the beers are quietly doing their thing, we get to work. Night Works is all about small-batch, carefully crafted spirits—starting with vodka and our house gin and evolving with every late-night idea worth chasing.

Daytobe wide

Created by design.
Fresh, approachable, and made to be enjoyed without overthinking it. Day to Be is our small-batch beer range—creative, easy-drinking, and brewed for whenever the mood strikes.
